Mini Paste Stuffed Cookie

Mini paste stuffed cookie is also known as single-bite stuffed pastry, which is a traditional cake in Taiwan. With crispy and soft crust, mini paste stuffed cookie is stuffed with sweet and sour pineapple filling, fruit pastes, red bean paste, sesame paste, sweet potato paste, etc. It is said that mini paste stuffed cookie is originated from Kinmen. The story has it that a son showed his filial affection to his mother by making her the cookie from their hometown. However, the mother was too old to bite and chew. Therefore, the son developed the stuffed cookie into a mini pastry with soft crust and mushy fillings. Thanks to this sweet modification, with a single bite, the old lady can easily swallow the pastry. Surprisingly, the mini paste stuffed cookie won the heart of the locals, and became popular souvenirs for visitors.
