About Kala jamun/Gulab jamun
Gulab jamun or gulaab jamun is an Indian sweet made from khoya and seasoned syrup, popular in South Asia, South Africa, and the Caribbean countries. Khoya is a dairy product resulted from the solid remain of evaporated milk. Kneaded into a dough with flour, gulab jamun will be shaped into small balls and deep-fried at a low temperature until they turned golden brown. Then, soaked in a light sugar syrup flavored with green cardamom and rose water, or saffron, the sweet gulab jamun was made. Modern recipes will use dried milk instead of khoya and replace sugar syrup with maple syrup. Gulab jamuns are often garnished with almonds, cashews and nuts.
Gulab jamun, called by other names, is prepared with different recipes in different regions. For example, in Bangladesh, gulab jamun is called Pantua while in Pakistan gulab jamun coated with coconut flakes is called chamcham. Another variant of gulab jamun is called Kala jamun. The word ‘kala’ which means black, indicate the color of the sweet ball. Sugar is added in the batter of kala jamun, and the caramelized sugar, due to the frying process, is so dark that it makes the sweet ball looks black. Another sweet similar to kala jamun is Lyangcha which khoya was replaced by milk powder. Such syrup soaked sweet can be found around the whole Indian subcontinents.
